Description: A member of the thistle family and looking very similar to cardoon but grown for the edible flower buds or simply as an ornamental perennial. It will also interbreed with cardoon. This plant has over 50 varieties available with at least 10 that do well in Texas. The plant has large somewhat spiny leaves and purple flowers, which are very attractive pollinators. Plants will die back to the ground in cold weather and should return in the spring. The deep-rooted artichokes will grow in a wide range of spoils except fast draining sandy soils, however, they perform best in fertile deep and well drained soils. They are moderately salt tolerant but will not produce as well.
