Description: A member of the thistle family and looking very similar to artichoke but grown for the edible leaves and stalks or simply as an ornamental perennial. It will also interbreed with artichoke. The plant has large somewhat spiny leaves and purple flowers, which are very attractive pollinators. Plants will die back to the ground in cold weather and should return in the spring. The deep-rooted cardoon will grow in a wide range of spoils except fast draining sandy soils, however, they perform best in fertile deep and well drained soils. They are moderately salt tolerant but will not produce as well.
